Navy Bean Soup

Don’t forget the easy, tasty, GAPS friendly bean soup.  It has a mild flavor that everyone enjoys.

Ingredients:

  • 1 lb organic navy beans
  • 2 stalks celery chopped
  • 2 carrots chopped
  • 1 ham bone
  • 1 bay leaf
  • 7 cups water
  • 1 tsp salt
  • 1 tsp black pepper

Instructions:

  1. Rinse beans and soak in water overnight.
  2. Drain off soaking water and add beans to slow cooker.
  3. Add water and cook on HIGH for 6 hours.
  4. Add remaining ingredients and cook 4-6 more hours on HIGH.
  5. Serve plain or with a little cheese on top.
