Almond Flour Banana Bread Muffins

I modified my regular banana bread recipe to make it grain free and it turned out great.  The kids are already gobbling them up.  I  didn’t expect these to rise very much so I filled the muffin cups all the way.  Next time 2/3 full would be fine.

 

Ingredients:

  • 3-4 very ripe bananas
  • 2 eggs
  • 2/3 cup honey
  • 1/4 cup organic butter (room temp or softened)
  • 2 cups almond flour
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1/3 cup chopped nuts (optional)

 

Directions:

  1. Preheat oven to 350 F.
  2. Grease loaf pan or muffin tin with coconut oil.
  3. Combine all ingredients in mixer.
  4. Fill muffin cups or loaf pan and bake 25-30 min for muffins or 1 hour for loaf (until toothpick comes out clean).
