I modified my regular banana bread recipe to make it grain free and it turned out great. The kids are already gobbling them up. I didn’t expect these to rise very much so I filled the muffin cups all the way. Next time 2/3 full would be fine.
Ingredients:
- 3-4 very ripe bananas
- 2 eggs
- 2/3 cup honey
- 1/4 cup organic butter (room temp or softened)
- 2 cups almond flour
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1/3 cup chopped nuts (optional)
Directions:
- Preheat oven to 350 F.
- Grease loaf pan or muffin tin with coconut oil.
- Combine all ingredients in mixer.
- Fill muffin cups or loaf pan and bake 25-30 min for muffins or 1 hour for loaf (until toothpick comes out clean).
