Ingredients:
1 lb grass fed ground beef
1/4 cup chopped onion (or 1/8 cup dried onion)
2 heaping tablespoons of taco seasoning
2 eggs
1 cup finely chopped cucumber
4-6 bell peppers
1 14oz can of diced tomatoes or fresh diced tomatoes + 1 cup water
1/2 cup shredded cheddar cheese

Directions:
1. Preheat oven to 375F
2. Pour tomatoes in a 9.5 x 11″ pan
3. Cup peppers in half lengthwise and remove seed and membrane
4. Place cut peppers in pan of tomatoes.
5. Combine chopped cucumber, beef, onion, taco seasoning, and eggs in a large bowl. Mix well.
6. Spoon beef mixture into the peppers.
7. Top each pepper with a spoonful of salsa.
8. Bake peppers at 375F for 45min or until beef in thoroughly cooked.
9. Top hot peppers with a little shredded cheese, and return to the oven a minute or two if necessary to melt the cheese.
10. Serve with sour crème and salsa if desired.
