Soaked Whole Wheat Pancakes

I modified a regular buttermilk recipe (from simplebites.net) and these soaked whole wheat pancakes were devoured by the kids this morning.  They have soaked whole grains and natural sweetener.  The only pancakes who survived for a picture were slightly overcooked 🙂

Soak overnight covered on the counter.

  • 2 cups whole-wheat flour
  • 2 cups buttermilk (see below for substitutes)

In the morning, whisk together in a separate bowl.

  • 2 eggs

Add to flour mixture:

  • whisked eggs
  • 2 teaspoons of baking soda
  • 1 teaspoon salt
  • 2 Tablespoons butter
  • 2 Tablespoons honey

Mix together well and cook until bubbles form and don’t pop and then trun over and brown the other side on cast iron griddle with butter.

For naturally sweet toppings try maple syrup and fruit.

For quick substitutes for buttermilk (from simplebites.net) try:

  • 1 tablespoon white vinegar or lemon juice and enough milk to equal 1 cup. Let stand 10 minutes.
  • 1/2 cup plain yogurt and 1/2 cup milk
  • 1 cup sour cream (this will be rich!)

Update (1/10/12):  The kids already requested pancakes again.  These are so fluffy.  I think they would also make a good waffle recipe which I will try soon 🙂
