GAPS Apple Crisp

This recipe is an adaptation from a recipe on Elana’s Pantry.   We are trying this as an alternative to apple pie.  I suspect this will go marvelously with homemade vanilla ice cream.  The kids like the apple part more than the crisp.  They say the topping tastes like cinnamon apple bread.

Ingredients:

  1. 2 cups blanched almond flour
  2. ½ teaspoon celtic sea salt
  3. 1 teaspoon cinnamon
  4. ½ teaspoon nutmeg
  5. ⅓ cup organic butter
  6. ¼ cup honey
  7.  1 tablespoon vanilla extract
  8. 5 medium apples, peeled, sliced, then chopped in half width-wise

Instructions:

  1. In a large bowl, combine almond flour, salt, cinnamon and nutmeg
  2. In a smaller bowl, combine butter, honey and vanilla
  3. Stir wet ingredients into dry
  4. Place apples in a 8 x 8 Pyrex baking dish (or equivalent)
  5. Crumble topping over the apples
  6. Cover and bake at 350° for 50 minutes on low rack
  7. When apples are soft and their juices bubble, remove cover and bake 10 more minutes to brown crisp
  8. Serve warm
