Gluten Free Zucchini Muffins

What to do with that giant zucchini from the garden.  Just half of it made the two cups of shredded zucchini needed for this recipe.

Ingredients:

2 1/2 cups  sugar
3 eggs
3 cups Namaste GF Perfect Flour Blend (Costco)
3 teaspoons vanilla
1 cup olive oil
2 cups zucchini, grated
1/4 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup nuts (optional)
3 teaspoons cinnamon

Directions:
Mix all ingredients well and fill 2 dozen muffin cups 2/3 full or make two small bread loaves.
Bake at 350F for 25 min. for muffins or 1 hr. for bread loaves.
