I had a fun canning day today pureeing 20 pounds of organic pears in the Vitamix then canning them with nothing but a little lemon juice added. The sauce is delicious and the kids were eating it warm as I worked. One 20 pound box made 24 pint jars of sauce. No need to add any water either, the ripe pears were plenty juicy. I cored them and left the skins and them Vitamix did the rest. These pears were from Azure Standard so the price was right at $23 for 20 pounds.
